Chicken Croquettes

Whether you want to recreate classic chicken croquettes at home, or you just have some leftover meat to use up, these delicious, crunchy on the outside warm on the inside croquettes taste every bit as good as the store-bought ones, maybe even better!
Chicken Croquettes
Ingredients
Amount | Ingredient |
1 | Carrot* |
1/2 Stalk | Celery* |
1 Tbs | Onion* |
3 1/2 Cups | Water* |
3 Cups | Finely Cubed Chicken |
1 Cup | Flour |
2 | Maggi Cubes, crushed or 1tsp Maggi Seasoning |
1/2 Cup | Margarine or Butter |
3 | Eggs, beaten |
2 Cups | Seasoned Breadcrumbs |
Oil for frying | |
Salt and Pepper, to taste** |
*Pre-made or store-bought vegetable or chicken broth can also be used
** Nutmeg, thyme, curry or any other spice can be used. Be creative!
- Chop and cook first 3 ingredients in 3 1/2 cups water. Drain and discard vegetables, reserving stock. You can also use pre-made vegetable or chicken stock or broth.
- Melt margarine or butter, and add flour, stirring vigorously. Add stock slowly, making a smooth paste. Add chicken and seasonings. Cook until heated through, 2-3 minutes.
- Spread in a plastic wrapped large loaf pan and place in refrigerator 3-4 hours. You can also just spread mixture on a platter and allow to cool. Remove from pan and plastic, and slice into croquette sized pieces or form into croquettes, depending which method you choose.
- Dip in beaten egg, then breadcrumbs. Fry in hot oil (350-375) for about 4 minutes, or until golden brown.
- Serve hot with your choice of mustard!
