Dutch Beets Recipe

Towards the end of the war, food became increasingly scarce. Many food not normally eaten were now becoming a staple. One dish became popular, when it was available. This was beetroot. Always inventive, the Dutch managed to make a meal out of just about anything. Today, beets are still a very popular dish, although with far more ingredients.

Ingredients

Makes 4 servings

  • 1 large jar sliced beets
  • 1 tablespoon onion, chopped fine
  • 1 tablespoon unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. Drain beets, reserving 1 cup liquid.
  2. Melt the butter over medium heat.
  3. Add the onion and saute.
  4. Stir in the flour until blended.
  5. Slowly whisk in the beet liquid.
  6. Bring to a boil.
  7. Cook and stir until thickened, about 2 minutes.
  8. Add the salt, pepper, sugar, apple cider vinegar and mix.
  9. Add the beets and heat through.

I would think so. You can boil or steam whole beets. Reserve some of the water from the pot or steamer for the recipe. I preserve garden beets in jars and like to pickle them too.
