Dutch Meatball Soup
Ingredients
- Meatballs (See Recipe Below)
- 3 Carrots, peeled and sliced
- 2 Stalks Celery, sliced
- 2 Onions, peeled and sliced
- 1 Carton Beef or Vegetable Broth
- 4 Cups Water
- 1 Package Vegetable Soup Mix
- 2 Bouillon Cubes
- 2-3 Handfuls Vermicelli Noodles
Instructions
- This is the easy part. Put all the ingredients, except for the vermicelli, into a large pot.
- Bring to a boil, cover and simmer until the vegetables and meatballs are cooked through.
- Add the vermicelli during the last 5 minutes of cooking. Remember, vermicelli expands quite a bit, so a little goes a long way.
- Serve hot with buns and butter!
Dutch Meatballs
Ingredient
- 1 lbs Ground Beef, Pork or Chicken (or use a combination!)
- 3 teaspoon Verstegen Mix voor Gehakt (Traditional or with Onions)
- 1 Dutch Rusk
- 1 Egg
- 1/4 Cup - 1 Cup Milk or Water (Adjust for desired consistency)
Instructions
- Mix all ingredients together and form into balls, whatever size you like.
- Cook in a frying pan on medium heat for 20-25 minutes, until browned and cooked through
