Dutch Meatball Soup

Ingredients

  • Meatballs (See Recipe Below)
  • 3 Carrots, peeled and sliced
  • 2 Stalks Celery, sliced
  • 2 Onions, peeled and sliced
  • 1 Carton Beef or Vegetable Broth
  • 4 Cups Water
  • 1 Package Vegetable Soup Mix
  • 2 Bouillon Cubes
  • 2-3 Handfuls Vermicelli Noodles

Instructions

  1. This is the easy part. Put all the ingredients, except for the vermicelli, into a large pot.
  2. Bring to a boil, cover and simmer until the vegetables and meatballs are cooked through.
  3. Add the vermicelli during the last 5 minutes of cooking. Remember, vermicelli expands quite a bit, so a little goes a long way.
  4. Serve hot with buns and butter!

Dutch Meatballs

Ingredient

  • 1 lbs Ground Beef, Pork or Chicken (or use a combination!)
  • 3 teaspoon Verstegen Mix voor Gehakt (Traditional or with Onions)
  • 1 Dutch Rusk
  • 1 Egg
  • 1/4 Cup - 1 Cup Milk or Water (Adjust for desired consistency)

Instructions

  1. Mix all ingredients together and form into balls, whatever size you like.
  2. Cook in a frying pan on medium heat for 20-25 minutes, until browned and cooked through
