Dutch Tomato Soup

Ingredients:

  • 1 thick piece of bacon, cut into blocks
  • 20g butter or margarine
  • 1 medium onion, chopped
  • ½ large carrot, chopped
  • 2 tbs. flour
  • 1 ltr bouillon (beef, chicken or vegetable)
  • 1 kg tomatoes chopped, or 1 large can diced tomatoes
  • 1 bay leaf
  • Salt and pepper to taste
  • Ketjap manis

Directions:

Fry the bacon until crisp. Add the butter or margarine and fry the onion and carrot until glazed. Add the flour and stir until well mixed, 1-2 minutes. Slowly add in the bouillon, all the while stirring, until the soup is slightly thickened. Add the tomatoes and bay leaf. Place the lid on the pan and simmer for 20 minutes. Remove the bay leaf and blend using a hand blender. If using a regular blender, allow the soup to cool down first. Add salt, pepper, honey, ginger syrup or ketjap manis to taste.
