Kaaspraak (Cheese Mash)

This is a simple recipe and an easy, cheesy comfort food!

Ingredients

  • 4 cups peeled and diced potatoes
  • 1 cup cubed Komijnekaas
  • 1 Medium onion
  • 2 cups beef broth
  • 2 ounces milk
  • ½ cup butter
  • Salt and pepper to taste

Directions:

  1. Pre-heat the oven to 350°F
  2. Peel and slice the onion
  3. Cook onion in the butter until golden and translucent.
  4. Cook the potatoes in the milk and stock.
  5. Mash the potatoes. They should not be too thick.
  6. Add salt and pepper to taste. The cheese and broth both have salt, so be careful!
  7. Mix in the cheese and onions. Place in an oven proof dish.
  8. Place in oven, uncovered, for about 45 minutes, or until the top is golden brown.
  9. Serve with a side of vegetables and enjoy!
