Bami Goreng (Indonesian Fried Noodles)
This iconic indonesian meal is a favourite of many Dutch households. You may even be served this as a dinner option on KLM flights!
It's a versatile and easy to make dish. Try it with different protein options and of course a fried egg on top for the authentic experience, or try omelette style as written below.
Ingredients:
- 350g Bami noodles (or other stir fry noodles)
- 2 eggs, beaten
- 500g boneless chicken, cubed into 1 inch pieces
- 2 gloves garlic, minced
- 2 tsp coriander
- 1 tsp ginger
- ½ cup vegetable or chicken broth
- 1 onion, sliced
- 1 carrot, julienned
- 1 pepper, any colour, sliced thin
- 1 leek, sliced thin
- 175g ham, cubed (optional)
- 150g shrimp, raw (optional)
- 1 tsp sambal oelek (chili paste)
- Ketjap manis, to taste
- Salt and pepper
Directions:
- Cook noodles according to package directions. Drain.
- In a large frying pan sprayed with cooking spray, cook the eggs into a thin omelette, When cooled, cut into thin strips.
- In the same pan, heat some oil. Saute the chicken, garlic, coriander, ginger and broth until chicken is no longer pink, about 7 minutes.
- Add vegetables and ketjap manis and saute for another 5 minutes.
- Add ham and shrimp, if using, until shrimp are pink.
- Add sambal oelek to taste.
- Add in noodles and sliced eggs. Heat through and enjoy!
Serve with kroepoek and/or peanut sauce.
