Kibbeling Recipe
Ingredients
- 2 egg yolks
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 10 ounces (1 can) ice cold beer
- ¾ cup all-purpose flour
- 1¼ teaspoon baking powder
- oil, for frying
- 1 ½ pound cod fillets, chunked into 3x3 pieces (can also use haddock or pollock)
- 1 tablespoon fish spices
Fish Spice Recipe
- 2 tsp fine salt
- 1 tsp ground paprika (or smoked paprika)
- 1 tsp ground mustard powder
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp ground white pepper
- ½ tsp ground nutmeg
- ½ tsp turmeric
Mix all ingredients and store is an airtight jar.
Directions:
- Beat the egg yolks in a bowl.
- Add salt and pepper.
- Pour in about 1 cup of beer and stir well.
- Add the flour and baking powder.
- Stir until batter is smooth.
- If the batter is too thick, add some more beer. It should stick well to the fish.
- Heat the oil to 350 ℉
- Sprinkle the fish with the fish spices.
- Place newspaper or another paper that absorbs oil on a plate.
- Dip fish in the batter.
- Carefully lower them into the oil, not overcrowding the pan.
- Fry the kibbeling for 5 minutes until golden brown and cooked through.
- Drain on paper.
Serve with a squeeze of fresh lemon juice, remoulade, or garlic sauce along with a serving of fries.
