Kibbeling Recipe

Ingredients

  • 2 egg yolks
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 10 ounces (1 can) ice cold beer
  • ¾ cup all-purpose flour
  • 1¼ teaspoon baking powder
  • oil, for frying
  • 1 ½ pound cod fillets, chunked into 3x3 pieces (can also use haddock or pollock)
  • 1 tablespoon fish spices

Fish Spice Recipe

  • 2 tsp fine salt
  • 1 tsp ground paprika (or smoked paprika)
  • 1 tsp ground mustard powder
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp ground white pepper
  • ½ tsp ground nutmeg
  • ½ tsp turmeric 

Mix all ingredients and store is an airtight jar.

Directions:

  1. Beat the egg yolks in a bowl.
  2. Add salt and pepper.
  3. Pour in about 1 cup of beer and stir well.
  4. Add the flour and baking powder.
  5. Stir until batter is smooth.
  6. If the batter is too thick, add some more beer. It should stick well to the fish.
  7. Heat the oil to 350 ℉
  8. Sprinkle the fish with the fish spices.
  9. Place newspaper or another paper that absorbs oil on a plate.
  10. Dip fish in the batter.
  11. Carefully lower them into the oil, not overcrowding the pan.
  12. Fry the kibbeling for 5 minutes until golden brown and cooked through.
  13. Drain on paper.

Serve with a squeeze of fresh lemon juice, remoulade, or garlic sauce along with a serving of fries.
