Patatje Oorlog (War Fries)

This delicious street food originated in Rotterdam. The name refers to the messy nature of this dish, which makes it look like a battlefield. Fries are topped with mayonnaise (or fritsause), a thick Indonesian peanut sate sauce and raw onions. If the ingredients and directions for the sate sauce seem daunting, we can help!

Sate Sauce Ingredients:

  • 1 tablespoon peanut oil
  • 1/2 finely chopped onion
  • 2 cloves garlic, minced
  • 2 teaspoons sambal oelek
  • 1/2 teaspoon freshly grated ginger
  • 1/2 cup peanut butter
  • 1 1/2 cups chicken broth divided
  • 1 tablespoon ketjap manis
  • 2 teaspoons brown sugar

Directions:

  1. In a pan, heat the oil. Add the onion and cook until soft.
  2. Add the garlic, sambal oelek and ginger. Stir for about 45 seconds, until fragrant.
  3. Add the peanut butter, stir to combine. Stir in the chicken broth, ketjap manis and brown sugar.
  4. Simmer for 5-10 minutes.
  5. Refrigerate until ready to serve.

Make your own fries or use frozen. Sprinkle with salt. Top with sate sauce, mayonnaise or fritsause, and raw onions. Keep a napkin handy!
