Tomatoensoep (Tomato Soup)

With the colder weather upon us, what better way to warm up than with a bowl of steaming hot soup. We hope you enjoy this easy Tomatensoep van tomatenpuree (tomato soup from puree).

Ingredients:

  • litre bouillon (chicken, beef or vegetable)
  • 1 can tomato puree (size depends on how much tomato flavour you want)
  • 30g uncooked rice
  • 1 bay leaf • Salt and pepper to taste
  • Chopped parsley for garnish

Directions:

  1. In a pan, bring the bouillon to a boil.
  2. Add the tomato puree, rice and bay leaf.
  3. Cover the pan and simmer for about 30 minutes.
  4. Remove the bay leaf and add salt and pepper.
  5. Stir the chopped parsley through.

Tips: 

  • Use vermicelli noodles instead of rice. After 10 minutes of simmering add in and cook for 20 minutes.
  • Stir 1/8 litre sour cream through the soup, making sure it does not come to a boil.
  • Add more spices or flavouring of your choosing.
